A compartment sink is required in all service establishments food in Illinois. One compartment for washing, one for rinsing, and sanitizing one. Some sinks have a power-washing function recirculating wash water to help clean hard pots. If chemicals are concerned, ask to see the MSDS sheet for that chemical. All chemicals that are required to have handled this sheet available. It shows how to use the chemical, and that data available if mishandled.
